  1. Cook Pete's Pasta until al dente in salted boiling water. Drain and set aside.

  2. While the pasta cooks, heat olive oil in a skillet over medium heat. Sauté minced garlic, anchovy fillets (if using), and red pepper flakes for a minute.

  3. Stir in crushed tomatoes, chopped black olives, and capers. Simmer the sauce for about 5 minutes.

  4. Season the sauce with salt and black pepper to taste.

  5. Add pasta to the skillet with the sauce. Toss to coat the pasta evenly.

  6. Remove the pan from heat and stir in chopped fresh parsley.

  7. Sprinkle grated parmesan cheese, if desired.
